It's Kevin, creator of the EcoQube and I've got news for you all!  

Since I’ve discovered micro-veggies its led to the product I am SO excited to share with you. I have been brainstorming and working on a new idea that I’ve had for nearly a year and actively working on it since September.

Hey Kickstarter Backers!  

We hope you are having an inspiring day. We love the EcoQube photos that you have been sending us. 

Here are just a few that we've seen.

Check out the epic basil ladder growing from this EcoQube C! 

 This red betta looks like it's doing swimmingly, surrounded by a plethora of green plants.

Currently, we're working on new projects here at ADI, and simultaneously, always looking for innovative ways to be productive by getting connected with nature. 

We’ve shared with you about the health benefits of micro-veggies and provided you with an awesome recipe to try out.  

Our experimentation with micro-veggies hasn’t stopped, especially as we keep seeing them pop up in our daily lives, like the arugula (a micro-veggie) that was on our pizza the other night.  

We’ve discovered some amazing ways they can be incorporated into your diet to make great tasting meals.  

Curated especially for you, here are the benefits of 5 types of micro-veggies along with some easy uses for when you don’t know what to eat for lunch.

1. Arugula: An excellent source of fiber and antioxidants that benefit your healthy bones and skin, arugula can be roasted with a pot of vegetables drizzled with olive oil and pepper to add some tangy flavor to a great appetizer!

 2. Broccoli Sprouts: Broccoli sprouts have powerful antioxidants that help strengthen the immune system and also contain sulforaphane, which helps prevent cancer. Check out the Micro-veggies Energy Salad recipe from our last blog post to see how you can incorporate broccoli sprouts into your diet!

3. Cilantro: Cilantro is high in antioxidants and may help improve sleep quality and lower anxiety. Add some cilantro to a freshly made guacamole, to give it a kick of flavor or sprinkle it on some carne asada or fish tacos!

4. Kale: This micro-veggie has been growing in popularity and a lot of it has to do with the fact that it is low in calories and lutein-rich, which facilitates eye health. It can be chopped up and mixed with your favorite ingredients to be included in a tasty salad. Alternatively, if you are one who thinks kale has a slightly bitter aftertaste, you can juice it up with a mix of apples, carrot, lettuce, honey, and lemon for a boost of antioxidants!

5. Spinach: Chock full of protein, vitamins, and iron, spinach is a favorite amongst the ADI team. For a special twist, buy or make your own tortilla corn or flour chips and dip them into a delicious spinach and artichoke dip. Another idea is to add handfuls of spinach to your favorite casserole for added nutrition and flavor.

Plant Tips & FREE Micro-veggies Recipe!

Hey Kickstarter Backers!

For those of you that may be trying out different plants, we have experimented on our own and received feedback from customers who have grow green onions very successfully in their EcoQube. Keep in mind as well, the idea of splicing plants, as it is much easier for a plant to grow from a sprout rather than direct from seed. 

We not only want to provide you with a quality product and support, but valuable resources that help you connect with nature and engage in sustainable living. For that purpose, we are constantly adding content to our blog which you can check out.

We hope you enjoyed reading about our recent discovery and growing love of micro-veggies in our last update, and how they can be useful to you as plant lovers. We have created a quick and easy recipe using micro-veggies for you to try out!

Recipe for Micro-veggies Energy Salad

Excellent for quick energy before heading to the gym for the day.

Serving Size: 2

Prep time: 10 minutes

What You’ll Need:

  • 1 tablespoon of honey

  • 10 small cherry tomatoes sliced in half

  • 1 tablespoon of fresh lemon juice

  • ½ an avocado diced

  • ½ a cup of walnuts chopped

  • 5 cups of microgreens (in this recipe, we use broccoli sprouts)

How to Make Your “Micro-veggies Energy Salad”:

  1. Toss your microgreens into a large mixing bowl

  2. Mixed in ½ an avocado diced and the sliced cherry tomatoes

  3. Add in the half cup of walnuts

  4. Sprinkle with lemon juice and drizzle the honey on top

  5. Enjoy and share with a friend!
